Creamy Chicken, Broccoli and Rice Casserole

This one is a yummy and toddler-approved postpartum meal! There are several ingredients that make this a great postpartum meal. The chicken, broth, milk, turmeric, onions and garlic, and mushrooms make this a powerhouse of a meal.

Ingredients

  • 3 tablespoons grass fed/grass finished butter
  • 1 diced yellow onion
  • 2 minced garlic cloves
  • 1lb boneless, skinless chicken thighs 
  • 2.5 tbsp flour (fresh milled is best)
  • 1 1/2 cups of heavy cream *note 1
  • 1/2 cup water
  • 2 cups homemade broth or store broth
  • 1 1/4 cups rice *note 2
  • 1 tsp both thyme and turmeric
  • 16 ounces chopped frozen broccoli
  • 8 ounces chopped mushrooms
  • 2 cups of meltable cheese. 
  • Nutritional Yeast (optional topping)

Instructions

Preparation

  1. Dice Yellow Onion, mince the garlic cloves and chop chicken into bite size pieces

Cooking Instructions

  1. Melt Butter over high heat. Add onion and garlic and cook for 1 minutes. Add the chicken and cook until it turns white.
  2. Turning stove down to Medium, add flour and stir until combined well. 1 minute.
  3. Add half the cream/milk while stirring. Once mixed together thoroughly, add the remaining cream/milk and stir.
  4. Add broth, water, rice, thyme/turmeric, and a pinch of both salt and pepper. Stir until incorporated. 30 seconds to one minute.
  5. Bring to Simmer, then cover. Turn down to medium low so rice can cook. 12 minutes
  6. Remove lid. Quickly add broccoli, mushrooms, and stir. Cook until broccoli has cooked. About 3 minutes
  7. Add half the cheese then stir. Top with remaining cheese and serve.

Notes

Note 1 – can use 2 cups of milk as well. Full fat or low fat is fine. Coconut milk also works.

Note 2 – Use any long grain or medium grain rice.
